Ingredients

  • 4 tins of cheap chopped tomatoes
  • 3 tablespoons of chopped herbs (fresh are best but dried can be used)
  • 4 chopped fresh garlic cloves or substitute with powder or frozen garlic - adapt to your taste
  • 2 chopped onions
  • 1 tablespoon of balsamic vinegar (optional)
  • 3 vegetable stock cubes or 1 vegetable stock cube and 2 beef stock cubes ( I use Bovril)
  • A bunch of freshly chopped basil (I know this is a pain but believe me it brightens up this dish), they can be bought as a plant from supermarkets or a bunch very cheaply
  • 1 pint of water
  • 2 finely chopped carrots and 2 finely chopped celery sticks (this is optional but does add to the taste)
  • 1 cup of red wine (optional)

Top Tips

Italian tomatoes are incredibly versatile; with a single batch, you can create a wide range of dishes. Use them as a base for rich pasta sauces, layer them into chilli con carne, spaghetti bolognese sauce, asagne and baked pasta dishes. They can also be blended and watered down to make a delicate, flavourful soup or a smooth passata for stews and risottos.

    Bung it all in a pan and bring to the boil and simmer for 30 mins

    Ready - add as a stock to your favourite dish or water down with milk for a creamy soup or water for a healthier soup - wow !!!!
