Ingredients

  • 2 cups left over mashed potato ( I use frozen mashed potato cooked in microwave)
  • 1 tbsp of garam masala
  • 2 cloves of chopped fresh garlic or 1tbsp of garlic puree
  • 1 tbsp of turmeric
  • 1 tbsp of cumin
  • 1 tbsp of coriander
  • 1/2 a chopped onion
  • 1 tin of red kidney beans
  • 2 tbsp of breadcrumbs
  • For the vegetable pakoras: 2 tbsp of plain flour
  • 1 whisked egg
  • sliced vegetables, any will do!, just not any watery veg, potato, sliced onions, sliced leeks, carrots all chopped equally to the same size
  • 100g of chick pea flour (you have to use chick pea flour there is no substitute!)
  • 1 tbsp of turmeric
  • 1 tbsp of garam masala
  • a bunch of coriander leaves

Meat or vegetarian eater, this is a fantastic healthy alternative to a proper stacked burger that is filling and delicious

This is a deliciously tasty dish infused with indian spices and finished with homemade crispy vegetable pakoras that are so healthy!!!

Cooking Steps

    Dry fry your onions and kidney beans
  • 2
    Add all your dry spices for your burger, empty into a bowl and add your mashed potato then mix to incorporate all you spices and beans

    Put your breadcrumbs in one bowl, whisked egg in another and flour in another dish

    season your flour with 1 tbsp of garam masala

    shape your mashed potato and bean mix into 4 burgers, I find rolling it into a ball in your hands then squashing into a burger

    coat each burger in flour, then egg and then bread crumbs - refrigerate for 30 mins to set solid

    Now for your vegetable crunchy pakora topping!!

    put your chopped vegetables in a bowl, all your spices, chick pea flour toss add 2 tbsp of water to create a batter mix with your hands and form into bowls

    put in air fryer with your burger and air fry until golden and crisp about 15 mins, turning halfway through

    load into a burger bun with fresh crisp salad, yoghurt and mint sauce and a shot of chilli - yummy
